Ingredients

  • Bone in turkey breast (6.5-7 pounds)
  • 2 Tbl olive oil
  • 1 Tbl minced garlic (3 cloves)
  • 2 tsp freshly squeezed lemon juice
  • 2 tsp dry mustard
  • 1 Tbl chopped fresh rosemary leaves
  • 1 Tbl chopped fresh sage leaves
  • 1 tsp chopped fresh thyme leaves
  • 1-1/2 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 3/4 C dry white wine

Preparation

Step 1

Preheat oven to 325.

Place turkey on rack in roasting pan, skin side up.

In small bowl, combine olive oil, garlic, lemon juice, mustard, roesmary, sage, thyme, salt and pepper. Rub mixture evenly all over skin of turkey breast. You can also loosen skin and smear half the paste under the skin. Pour wine into the bottom of roasting pan.

Roast for 1.5-1.75 hours, til the skin is golden brown and an instant read meat thermometer registers 165 when inserted into the thickest and meatiest are of the breast. Check after an hour or so, if skin is overbrowning, cover loosely with foil.

When turkey is done, remove from oven, cover pan with foil and allow to rest at room temperature for 15 minutes. Slive and serve warm with pan juices.

Serves 6-8.
