Ingredients

  • cup of the following dry beans:
  • Black eyed peas
  • Split green peas
  • Butter beans or large limas
  • Small limas
  • Pinto beans
  • Red beans
  • Navy beans
  • Great northern beans
  • Pearl barley
  • Lentils
  • 1 29 oz can tomatoes
  • 1 large onion
  • 1 t chili powder
  • Juice of 1 lemon
  • Salt and pepper
  • 1/2 lb ham hocks

Preparation

Step 1

Wash beans thoroughly and soak in large pot overnight with 2 T salt
Boil and rinse three times
Add 2 quarts water and ham hocks
Bring to a boil then simmer 2 to 2 1/2 hours, stirring occasionally
Add tomatoes, onion, chii powder, lemon juice, salt and pepper.
Simmer another 30 minutes.

Makes a very large pot of soup. Even better made a couple days ahead and aged in refrigerator.
