Ingredients
- 1 lb. boneless chicken or pork chops
- 1/4 cup teriyaki sauce
- 1 tbsp. grated peeled fresh ginger
- 2 pkgs. (3 oz. each) any flavor ramen noodle soup mix
- 1 pkg. (16 oz.) frozen mixed vegetables, thawed
- 2 scallions sliced

Step 1
Cut chicken crosswise into 1/4" thick slices. Combine teriyaki sauce and ginger. Discard flavor packets from soup mix or save for another use. In large nonstick skillet, heat 1 tbsp. oil over high heat. Add chicken, in batches; cook, turning once, until browned, about 2 minutes per side; remove. Add 2 cups water to same skillet; bring to boil. Add noodles and vegetables; reduce heat to medium. Cover; cook until tender, 4 -5 minutes. Add chicken and teriyaki mixture; cook, stirring, until heated through, 1 - 2 minutes. Relmove from heat; stir in scallions.
