  • Apricot Honey Marmalade:
  • 8 ounces cream cheese, softened
  • 3 1/2 ounces feta cheese, crumbled
  • 3 1/2 to 4 ounces goat cheese (chevre), crumbled
  • Bruschetta, for serving
  • 1 tbsp honey
  • 3 tbsp apricot preserves
  • 1 tbsp balsamic vinegar
  • 2 tbsp dried chopped onion
  • 1 tbsp chopped fresh thyme

Preparation

Step 1

Place cream cheese in a bowl and beat until creamy. Add feta and goat cheese and beat on low speed until well blended. Set aside.

To prepare the marmalade, combine honey, apricot preserves, vinegar, onion and thyme in a saucepan. Cook over medium heat until thickened. Let cool to room temperature.

Add marmalade mixture to the cheese mixture and whip on low speed until well blended. Cover and chill for up to 1 hour, or until stiff.

Serve on bruschetta.
