Ingredients

  • 3 ripe bananas
  • 1/2 applesauce
  • 4 egg whites
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/4 cup vegetable oil

Step 1

1. Preheat the oven to 350 F. Lightly grease 9 x 5 inch loaf pan. Using blender, mash the bananas, add the applesauce, egg whites, vanilla and both sugars. Blend until smooth.

2. In a medium bowl, mix the flour, cinnamon, baking soda, and baking powder. Slowly add the banana mixture to the flour mixture and stir until just combined, then stir in the oil gently, until just blended.

3. Pour the batter into the prepared loaf pan and bake for 50 to 55 minutes. Test for donesness with a toothpick. Cool for 15 minutes before serving.
