Ingredients
- 2 packages frozen chopped spinach, thawed and squeezed dry
- 2 cups herb stuffing mix, crushed
- 1 cup parmesan cheese
- 1/2 cup butter, melted
- 4 scallions, chopped
- 3 eggs
- 1 dash nutmeg

Preparation
Step 1
1. Combine all ingredients. Shape into 1" balls. Refrigerate or freeze until ready.
2. Bake on ungreased baking sheet 10-15 mins at 350.
Notes: These were really very good. Had to nudge people to try them and the kids didn't eat them, but they were liked. Easy to make ahead, freeze, and pop in the oven. Didn't serve with a dip.
