Ingredients
- In an 8x8 or 9" pan:
- Put 4 cups cut-up rhubarb
- Mix 1 cup sugar and 3 tbsp flour and sprinkle over the top and gently stir into the rhubarb.
- Mix 1 cup sugar
- 1 cup flour
- 1 tsp baking powder
- 1/4 tsp salt
- Stir in 1 beaten egg and 2 tbsp butter
- Mixture will be crumbly.
- Sprinkle over rhubarb and bake 35-40 minutes or until nicely browned.
