Cranberry Orange Bread

This bread has a very good flavor and it is not too sweet. The cranberry and orange flavors combine to make a perfect bread for breakfast or any occasion.

Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1/2 cup orange juice
- Grated peel of one orange
- 2 Tbsp melted butter OR margarine
- 2 Tbsp hot water
- 1 cup Craisins
- 1 cup walnuts, coarsely chopped
- Non-stick Cooking Spray

In a large mixing bowl, combine the dry ingredients. In another bowl, beat the egg; Add the orange juice, grated orange peel, butter, and hot water. Add the wet mixture to the dry mixture and stir just until moistened. Gently fold in the dried cranberries and walnuts. Spray the bottom of a 9" x 5" x 3" loaf pan with non-stick cooking spray and spoon the mixture into the pan. Bake at 325 degrees Fahrenheit for 60 minutes. Remove the bread from the oven and cover the pan with foil. Continue baking for an additional 30 minutes or until a toothpick inserted near the center comes out completely clean. Cool the bread in the pan for 10 minutes before removing the bread to a wire rack to completely cool.
