Ingredients

  • 2 1/4 cups chicken broth
  • 1 package frozen corn, broccoli, and sweet red peppers, 16 oz
  • 1 cup couscous
  • 2 teaspoons minced jalapeno
  • 3 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 1 tablespoon brown sugar, or honey
  • 1/4 cup chopped cilantro

Preparation

Step 1

1. Heat broth to boiling; add veggies. Heat 1 minute, then remove veggies with slotted spoon. Set aside and keep warm.

2. Reheat broth to boiling. Stir in couscous and chilies; remove from heat. Cover and let stand 10 minutes.

3. Whisk together soy sauce-cilantro. Add veggies and toss. Serve over couscous.

Notes: This was certainly easy and good, but nothing special. Couldn't find the veggie mixture in the recipe, so used frozen peppers and green beans. Probably would have been better with something with corn. Used the brown sugar and fresh jalapeno.
