Cold Orzo Salad

Ingredients

  • Serves 4
  • 1 c. dry (2 c. cooked) orzo
  • 1 tomato – with seeds pulled out and diced
  • 1 green onion
  • 1 Tbs. chopped dill
  • 1 Tbs. chopped parsley
  • 2 Tbs. chopped olives
  • 2 oz. feta cheese, crumbled
  • 1 1/2 Tbs. lemon juice
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbs. Dijon mustard
  • 2 Tbs. olive oil

Preparation

Step 1

Toss together first 6 ingredients. Sprinkle cheese. Lightly toss. Serve at room temperature.
