Spinach and Strawberry Salad with Goat Cheese Bruschetta 0 Picture

Ingredients

  • 1/4 cup sugar
  • 2 tablespoons white wine vinegar, or sherry
  • 1 1/2 teaspoons sesame seeds, toasted
  • 1 1/2 teaspoons olive oil
  • 1 teaspoon minced red onion
  • 3/4 teaspoon poppy seeds
  • 1/4 teaspoon Hungarian sweet paprika
  • 1/8 teaspoon salt
  • 6 cups torn spinach
  • 2 cups strawberries, halved
  • 2 tablespoons slivered almonds, toasted
  • 3 ounces goat cheese, sliced into sixths
  • 6 slices French bread, toasted

Preparation

Step 1

1. Combine sugar-salt in a jar, shake vigorously.

2. Toss spinach and berries, then toss with dressing. Garnish salads with almonds. Spread cheese over toasts, serve with salad.

Notes: This was really very, very good - fabulous for spring.
Served for Passover seder, 2004 - without the bread and goat cheese.
