Ingredients
- 1 cucumber, halved and seeded, not peeled
- 2 red peppers, cored and seeded
- 4 plum tomatoes
- 1/2 red onion
- 3 garlic cloves. minced
- 3 c (23 oz) tomato juice
- 1/4 c white wine vinegar
- 1/4 c olive oil
- 1/2 tsp salt
- 1 tsp pepper
- 2 jalapenos, seeded and minced

Preparation
Step 1
Roughly chop cucumber, bell peppers, jalapenos, romatoes, onion into 1 inch pieces.
Pulse each veggie eparately in food processor until coarsely choped.
Mis together in largebowl.
Add remaining eingredients. Mix well and chill for several hours to blend.
