Ingredients

  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 1 tbsp olive oil, or more (as needed for saute)
  • 1 (28 oz) can diced tomatoes
  • 1 can mushroom pieces, drained
  • 1 (4 oz) can sliced ripe olives, drained
  • 2 tsp dried oregano
  • 12 oz spaghetti, cooked and drained
  • 2 1/2 cup shredded cheddar cheese
  • 1/4 cup parmesan cheese

Preparation

Step 1

In a skillet, saute onion and green pepper in olive oil until tender.
Add tomatoes, mushrooms, olives, and oregano.
Simmer uncovered for 10 minutes.
Place half of the spaghetti in a greased 13 X 9 inch casserole dish.
Top with half of the vegetable mixture. Sprinkle 1 cup of the cheese on top. Repeat layers.
Sprinkle with the parmesan cheese
Bake uncovered at 350 degrees for 30-40 minutes or until heated through
