Ingredients

  • 1 cup cornmeal
  • 1 cup flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 1/4 cups buttermilk
  • 2 tablespoons unsalted butter, melted
  • 1 cup sliced strawberries

Preparation

Step 1

1. Heat oven to 350.

2. Combine cornmeal-salt. Whisk together eggs and buttermilk. Stir cornmeal mixture into eggs. Fold in butter and berries. Scoop into sprayed muffin pan.

3. Bake 15-20 minutes; or until tops are brown. Cool in pan 10 minutes, then remove and cool completely on wire rack.

Notes: Delicious and very easy! Only change was to use eggbeaters instead of eggs.
