Ingredients

  • 1 1/2 pounds sole
  • salt and pepper
  • 1/2 cup dry white wine
  • 2 tablespoons lemon juice
  • 2 bunches spinach
  • 2 tablespoons light butter
  • 2 tablespoons flour
  • dash nutmeg
  • 1 teaspoon Dijon mustard
  • 1/3 cup whipping cream
  • 1 cup lowfat Swiss cheese

Preparation

Step 1

1. Season sole. Fold in thirds and arrange in baking dish. Add wine and lemon. Bake at 400 10 mins.

2. Remove fish. Add water to cooking liquid to make 1 cup.

3. Steam spinach, drain and chop. Spread in sprayed dish. Place fish on top.

4. Melt butter, add flour and nutmeg. Cook until bubbly. Add mustard, fish liquid, and cream. Cook until thick. Add 1/2 cup cheese, season. Spoon over fish, top with rest of cheese.

5. Bake at 450 8-10 mins.
