Ingredients

  • TOPPING:
  • 325 degrees for 30 minutes - makes 12
  • 3/4 cup brown sugar
  • 1 egg
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1/2 C chopped nuts (optional)
  • 1 C finely chopped rhubarb
  • 1/2 C oil
  • 1/2 C milk (soured with 1 tsp vinegar)
  • 1 1/2 C flour
  • 1/2 tsp soda
  • 1/4 cup brown sugar
  • 1/4 cup chopped nuts
  • 1/2 tsp cinnamon

Preparation

Step 1

Directions: Combine sugar, oil, egg, sour milk and vanilla and mix well. Add flour, salt and soda. Add rhubarb & nuts. Pour into Pam sprayed muffin tins or greased and floured.

Sprinkle topping on top of rhubarb batter. Bake 325 for 30 minutes
