Ingredients
- 2 plantain
- 1 large avocado
- 1/2 onion (optional)
- 1 small tomato
- lime juice
- salt, pepper, and cumin to taste

Step 1
Slice plantain to 1/2" thickness and place on a greased pan or silpat. Bake for 5 minutes at 400°. Flip and cook another 5 minutes.
While plantain is cooking, chop onion tomato. Mash up an avocado in bowl. Stir with a bit of lime juice. Mix in chopped veggies and a sprinkling of salt, pepper, and cumin. Serve at once.
