Ingredients
- Vinaigrette Dressing:
- 8 cups (2 lbs.) cabbage, sliced 2 inches long
- 1 cup carrots, Julienne 2 inches long
- 3 tablespoons onion, finely chopped
- 2 teaspoons salt
- 1 tablespoon sugar
- 1/8 teaspoon pepper
- 1/2 cup vinegar
- 1/2 cup salad oil (too much oil, cut in half)\
- Garnish :
- 1 tablespoon parsley, finely chopped

Preparation
Step 1
1. Combine the ingredients in a bowl and mix well.
2. Place the carrots in a microwave-safe bowl (1 liter or 1 quart.) Cover with a vented microwave lid and cook on HIGH(1200W) for 30 seconds.
3. Place the cabbage in a large bowl (4 liter or 4 quart) and add the carrots. Pour in the dressing and toss well.
4. Garnish with parsley.
