Ingredients
- 300 g (2 1/3 cups) self-raising flour
- 40 g (1/3 cup) plain flour
- 1/2 teaspoon bicarbonate of soda
- 115 g (1/2 cup light brown sugar
- 60 ml (1/4 cup) maple syrup
- 250 g (2/3 cup) mashed banana-about 2 small bananas
- 2 eggs, lightly beaten
- 250 ml (1 cup) buttermilk
- 80 ml (1/3 cup) vegetable oil

Preparation
Step 1
Preheat oven to 200°C.
Sift flours, bicarbonate of soda and sugar into a large bowl; stir in syrup, banana, eggs, buttermilk and oil just until combined.
Spoon mixture into muffin pan. Bake for about 20 minutes. Turn onto wire racks to cool.
