Ingredients

  • 6 apples, pared,cored, & sliced ( 3 cups)
  • 5 tbsp + 2 cups sugar
  • 5 tsp. cinnamon
  • 3 cups flour
  • 1 tsp vanilla
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 cup oil
  • 4 eggs
  • 1/4 cup orange juice
  • whipped cream if desired

Preheat oven at 375 degrees. Combine apples with 5 tbsp sugar & cinnamon. Set aside. Sift flour & remaining sugar, baking powder, and salt into a bowl. Make well in center, pour in the eggs, oil, juice, and vanilla. Beat until well blended. Spoon 1/3 of the batter into a 9 inch or 10 inch angel cake pan. Make ring of 1/2 apple mixture( well- drained), taking care not to let apples touch side of pan. Spoon another 1/3 of batter, make ring of another half of apples mixture, spoon in rest of batter. Bake 1 1/4 hours at 375vdegrees. (if it gets too brown, cover with foil) Allow to cool before removing from pan. Serve with whipped cream if desired. May also be made with peaches.
