Ingredients
- 1 tablespoon corn oil, or peanut oil
- 3 cloves garlic, minced
- 1 onion, chopped fine
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon dry ginger
- 1/2 teaspoon crushed red pepper flakes
- 16 ounces canned tomatoes
- 1 cup reduced chicken broth, see note
- 1/2 cup lentils
- 1 tablespoon sugar
- 1/2 cup lowfat yogurt
- 2 tablespoons minced basil

Preparation
Step 1
1. Saute garlic and onion in oil until sizzling. Add cumin-red pepper flakes. Saute another minute.
2. Add tomatoes-sugar. SImmer until lentils are tender and sauce is thick; about 30 minutes. Stir in yogurt and basil; spoon over cooked pasta.
