  • 1 cup quinoa, rinsed and soaked for 24 hours
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon sea salt
  • 1 cup seeded and diced cucumber
  • 1 cup seeded and diced roma tomato
  • 1/4 cup minced red onion
  • 1/2 cup flat italian parsley

Step 1

Drain quinoa; transfer to a medium bowl and marinate in olive oil, lemon juice, and salt for 30 minutes to 1 hour. Add remaining ingredients and toss until well incorporated. Eat immediately or let flavors marinate for an hour prior to serving.
