Ingredients

  • 4 large Spanish onions
  • 1 Tablespoon butter
  • 2 1/2 cups diced potatoes
  • 2 cups fresh chicken broth
  • 1/4 teaspoon paprika
  • Salt & Pepper to taste
  • 2 cups milk
  • 1 cup heavy cream
  • Chopped fresh chives

Preparation

Step 1

Saute sliced onions in heavy skillet with butter until soft but not brown. Add teh potatoes, chicken stock and seasonings. Simmer covered for 45 minutes. Put mixture in an eletric belnder or run through a sieve. Chill; then add milk and cream. Serve topped with the chives.
