Ingredients
- Caramel glaze:
- 2 cups sugar
- 1 1/2 cup veg oil
- 4 large eggs
- 1 tsp vanilla
- 2 cup all-purpose flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1 tsp salt
- 3 cups peeled and chopped apples
- 1 cup chopped pecans
- 1 1/2 cups firmly packed brown sugar
- 1/2 cup chopped pecan
- 1/2 cup butter
- 3 tsp milk
- In a small saucepan, combine and bring to boil over med heat. Cook until temp reaches 234* stirring occasionally.

Step 1
Preheat oven to 350* grease and flour fluted pan. In a large bowl beat sugar and oil at med speed until combined. Add eggs one at a time, beating well in between, beat in vanilla, In a med bowl, combine flour, baking powder, cinnamon, and salt; sift. Gradually add to sugar mixture beating until combined. Stir in apples and pecans. Pour in prepared pan. Bake 1 hr to 1 hr 10 min or until toothpick clean. Let cool in pan 10 min then remove and cool on wire rack. Spoon warm caramel glaze over cake.
