Ingredients

  • 2 cups almond meal
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1 1/2 tablespoons butter, melted
  • 1/8 cup raw honey
  • 1/8 cup maple syrup
  • 1 1/2 teaspoon vanilla extract
  • 1/4 cup dark chocolate chunks

Preparation

Directions Makes 20 cookies

Preheat the oven to 350° F.

Add almond meal, baking soda and sea salt to a large mixing bowl and combine well with a spoon.

Add butter to a small saucepan and melt over low heat.

Pour raw honey into a 1/4 cup until it’s half full then add to the almond meal bowl.

Do the same with the maple syrup, pour into a 1/4 cup until half full and add to almond meal bowl.

Add butter and vanilla extract and mix well until fully combined.

Add chocolate chunks and mix into almond mixture.

With a teaspoon scoop small amounts of dough into your hands, roll together to form a ball, lay on a parchment paper lined cookie sheet or a baking stone, flatten with your hand and repeat until you run out of dough. (Refer to the first image below the title for what the pre-cooked & flattened balls of dough look like.)

Bake for 6-8 minutes, transfer to a baking rack, repeat until all dough is gone.

Pop a few in your mouth while they’re warm, dunk in some whole milk (if you prefer) and don’t be surprised if they’re all gone before the second batch is done in the oven.
