Ingredients
- 1 teaspoon olive oil
- 1 teaspoon safflower oil
- 1 large saucepan
- 2 garlic cloves, minced
- 1 onion, diced
- 5 medium potatoes, peeled and diced
- 1 potato, peeled and cut in half
- 1 carrot, diced
- 1 celery stalk, diced
- 2 cups chicken broth
- 2 16-oz. cans cannelini beans with their liquid
- 1/2 teaspoon oregano
- 1/2 teaspoon freshly ground black pepper
- sun-dried tomatoes
- grated cheese

Preparation
Step 1
Put the oils in the saucepan and gently saute the garlic and onion. Add all the potatoes, the carrots, celery, chicken broth, and enough water to cover the vegetables. Bring to a boil, then simmer until done(about 1/2 hour). Remove potato that was cut in half, mash and return to pot. Add beans, oregano, and black pepper, stir gently, and simmer for 10 minutes. Serve in soup bowls. Have some chopped sun-dried tomatoes and grated cheese on the side for those who want them.
