Ingredients

  • Crust:
  • 1 1/2 cup ground choc wafer
  • 4 tbs sugar
  • 5 tbs butter, melted
  • Filling:
  • 2 8oz cream cheese
  • 1/2 cup sugar
  • 2 large eggs
  • 1/2 tsp grated orange zest
  • 1/2 cup sour cream
  • yellow food coloring
  • Chocolate Rats:
  • 8 large strawberries sliced almonds
  • 1 container dipping choc
  • 1/2 cup black decorating sugar
  • Yellow and brown candy coated choc covered sunflower seed
  • Slivered almonds black licorice laces

Step 1

Heat oven 350* grease 9 in tart pan with removable bottom. For crust: combine all ingredients, press into tart pan and up sides. Bake about 7-10 min- remove and reduce heat to 325*
Beat cream cheese and sugar in med bowl until light/fluffy. Add eggs one at a time beating well after each, add sour cream and orange zest and beat just until blended. Add 4 drops yellow food coloring. Remove 1/2 cup and place in small bowl add 5 more drops food coloring- spoon into resealable bag. Pour light yellow into tart crust and smooth top. Snip small corner from bag, and pipe random spots varied sizes to make cheese holes. Bake until center is set 30-35 min. Cool completely- Refrigerate at least 2 hours.Line cookie sheet with wax paper, Trim a small piece from side so it rests horizontally on paper. Insert 2 sliced almonds about 1 in from pointed end of strawberry and about 1 in apart to make ears. Insert fork into large end and spoon choc over strawberry. Sprinkle with black sugar and place on wax paper. Add yellow candies for eyes, slivered almond for teeth, and brown candy for nose. Refrigerate until use. Make a hole with toothpick in the back end of strawberry and insert 1- 4 in piece black licorice for tail
