Ingredients

  • 1 cup old-fashioned rolled oats
  • 3 1/2 cups all-purpose flour
  • 2/3 cup sugar
  • 1 Tbs. caraway seeds
  • 1 Tbs. baking powder
  • 1 tsp. baking soda
  • 3/4 tsp. salt
  • 1 cup golden raisins and/or pomegranate-flavored sweetened dried cranberries
  • 3 eggs
  • 1 1/3 cups buttermilk

Step 1

1. Preheat oven to 325F. Coat baking sheet with cooking spray. Reserve 1 Tbs. oats. In large bowl, combine flour, sugar, caraway seeds, baking powder, soda, salt and remaining oats. Toss in raisins and/or carnberries.
2.Lightly beat 2 eggs. Stir beaten eggs and buttermilk into flour mixture until combined. On lightly floured surface, knead mixture until dough forms. Shape into 6" round loaf. Place on baking sheet.
3. With serrated knife, cut 1/2"-deep "X" into top of loaf. Lightly beat remaining egg; brush over dough. Sprinkle with reserved oats. Bake 50-55 minutes or until loaf sounds hollow when tapped on bottom. Transfer from baking sheet to rack; cool.
