Ingredients

  • Ground Spice Mixture:
  • 3 lbs baby back ribs
  • 10 cups water
  • 6 whole dried cayenne peppers
  • 1/2 tsp salt
  • 10 cloves
  • 3-inch cinnamon stick
  • 2 tbsp fennel seeds
  • 12 green cardamon pods
  • 16 cloves
  • 1/2 tsp black peppercorns
  • 1 tsp kalonji seeds
  • 1/2 tsp ground mace
  • 2 tsp ground cayenne pepper
  • Spice Rub:
  • 1/2 cup canned crushed tomatoes
  • 1/3 cup cooking oil
  • 1 tsp salt
  • 1 tsp finely chopped ginger
  • 1 tbsp ground spice mixture (above)

Preparation

Step 1

Place ribs and spices in a large pot and bring to a boil on high heat.
Cover, reduce heat to medium and cook for 45 minutes.
Transfer ribs to a large bowl to cool.

Ground Spice Mixture:
Heat a small frying pan on high for 1 minutes.
Add spices and reduce heat to medium high and cook, for 2 minutes.
Cool for 15 minutes, then grind to a powder.

Spice Rub:
To the bowl of ribes, add tomatoes, oil, salt, ginger, and ground spice mixture.
Wearing plastic gloves, mix well, rubbing the mixture into the meat so that the tomatoes and spices fully cover the ribs.
Heat grill to high.
Place ribs on the grill and cook for 2 minutes.
Turn over and cook another 2 minutes.
