Ingredients

  • 3 pounds sweet potatoes
  • 3 golden delicious apples
  • 1/4 cup fresh lemon juice
  • 1 cup halved vacuum packed roasted chestnuts
  • 1 stick butter
  • 1/2 cup firmly packed light brown sugar
  • 1/2 cup honey
  • 2 tablespoons dark rum
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground mace

Preparation

Step 1

Prick sweet potatoes several times and bake in preheated 400 degree oven for 45 to 1 hr until tender
Peel three apples and cut lengthwise into eights and toss with 1/4 cup fresh lemon juice
Take out potatoes and let cool, then peel and cut them in diagonal 1/4 inch slices.

In a buttered oven ready pyrex dish about 14 x 9 ,arrange the sweet potatoes and the apple slices alternating slices. Sprinkle chestnuts over the slices.

In a sauce pan combine the butter, brown sugar, honey,rum , cinnamon,ginger,mace and cook the mixture over moderate heat stirring until sugar is dissolved. Spoon the syrup over the sweet potato-apple mixture and bake at 400 degrees for 30 minutes basting occasionally or until apples are tender and potatoes heated through. At the end you can brown by placing under broiler for a few minutes
