Ingredients

  • 1.5 cups oat flour (puts oats in food processor) (grain)
  • 1/2 cup whole oats (grain)
  • 1/2 cup pecans (fat/protein)
  • 1/2 cup unsweetened coconut (fat)
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp sea salt
  • 6 heaping TBS xylitol
  • 1/2 cup almond milk (veggie/protein)
  • 2 eggs (fat/protein)
  • 1 tsp vanilla
  • 1/3 cup melted coconut oil (fat)
  • 1 small zucchini shredded (veggie)
  • 1 carrot peeled and shredded (veggie)

Preparation

Step 1

Mix all dry ingredients and then all wet. Add together. Put into a 9x9 baking dish with parchment paper on the bottom of pan.

Bake a 350 for 40 minutes.
