Ingredients

  • 2/3 cup lite mayonaise
  • 1 scallion, chopped
  • 2 Tbs. Dijon mustard
  • 2 tsp. lemon juice
  • 1 tsp. lemon zest
  • 1 tsp. capers, rinsed, chopped
  • 24 jumbo shrimp, about 1 lb. 2oz.
  • 2 tsp. 30% less sodium Old Bay seasoning
  • 1/2 tsp.onion powder
  • 1 Tbs. oil
  • Lemon wedges and dill sprigs, optional

Step 1

In bowl, mix mayo, scallion, mustard, lemon juice, zest and capers. Cover and refrigerate. Meanwhile, with kitchen shears, cut through shell at back of each shrimp. Peel away shell. With knife, loosen dark vein from center; pull out with fingers. Toss shrimp with Old Bay and onion powder until coated. In nonstick skillet, heat oil over medium-high heat. Add shrimp; cook, turning once, until opaque and cooked through. Serve hot or cold.
