Ingredients
- 1/2 cup cooking oil
- 1/2 tsp asafoetida
- 1/3 to 1/2 pureed tomato (1 small)
- 1 tsp salt
- 1 tsp cayenne pepper
- 2 tbsp ground coriander
- 2 lbs new potatoes, unpeeled and cut in 1/2 slices
- 1 tbsp + 1 tsp mango powder

Step 1
In a large heavy-bottomed pan with lid, heat oil on medium-high for 45 seconds.
Add asafoetida, stir for 15 second.
Reduce to medium and stir in tomato.
Add salt, cayenne, and coriander and stir well and saute for 2 to 3 minutes.
Add potatoes and mix well to coat with spices.
Cook uncovered for 6 to 7 minutes, stirring 3 or 3 times.
If spices stick to the bottom, reduce heat.
Cover with lid and cook 5 minutes.
Add mango powder and stir gently.
Cook further 3 to 4 minues
