Ingredients

  • 1 pkg red velvet cake mix and the eggs and oil required for cake
  • 1/2 cup butter, at room temperature
  • 1 1/2 cups confectioners' sugar
  • 1 tbs milk
  • 3/4 tsp vanilla
  • 3 pkgs (12 oz each) white chocolate chips
  • 1 tbs oil
  • Red and green oil-based concentrated food colorings for candy
  • Ruby and emerald pearlized decorating sugars

Preparation

Step 1

Using eggs, oil and water, prepare cake mix and bake in a 13 x 9" cake pan according to directions on package; cool.

On medium speed, beat butter until smooth. On low, gradually beat in confectioners' sugar until blended. Add milk and vanilla; beat until fluffy. Crumble cake into frosting; beat until just combined. Shape into 36 balls. Place in a single layer on baking sheet. Refrigerate until firm, about 1 hour.

Line baking sheet with wax paper. In microwave-safe bowl, mix chocolate chips and oil. Microwave on Medium 1 minute; stir, then, in 10-second intervals, heat, stirring, until melted and smooth. Transfer 2 Tbs chocolate to each of 2 bowls; with coloring, tint one bowl red and one green. Reserve.

Using a fork or skewer, dip cake balls into untinted chocolate, letting excess drip off; transfer to baking sheet. Sprinkle with decorating sugar or drizzle with tinted chocolates. Refrigerate until ready to serve.
