Ingredients
- 1 1/2 cups water
- 1 1/4 tsp curry powder
- 3/4 tsp salt
- 1 cup whole-wheat couscous
- 1 (15 1/2 oz) can chickpeas, rinsed and drained.
- 1 cup shredded cooked chicken breast
- 1 Granny Smith apple, halved, cored, and cut into wedges
- 1 small red bell pepper, cut into thin strips.
- 1/2 small red onion, thinly sliced
- 3 tbps lemon juice
- 2 tsp olive oil
- 6 cups torn romaine lettuce.

Step 1
1. Prepare chicken in nonstick skillet. Let cool and shread into approximately 1 to 2 inch pieces. Set aside.
1. Combine the water, 1 tsp of the curry powder, and 1/2 tsp of the salt in a small saucepan and bring to a boil over medium-high heat; add the couscous. Cover the pot and remove from the heat. Let stand 5 minutes, then fluff with a fork and set aside.
2. Combine the chickpeas, chicken, apple, bell pepper, onion, lemon juice, oil, and the remaining 1/4 tsp curry powder and 1/ 4tsp salt in a large bowl. Add the couscous and mix well. Divide the lettuce among 6 plates and top each serving evenly with the chicken salad.
