Roasted Shrimp Salad

Ingredients

  • Dressing:
  • 1 # Shrimp Cleaned & Peeled
  • 1 Bag Spring Mix Greens
  • 1/4 C EVOO
  • 1 Orange Zest
  • 1/2 C Red Onion Diced
  • 1/4 C Fresh Dill Minced
  • Sea Salt & Pepper to Taste
  • Romano Cheese Grated
  • 1/2-1 C Mayonnaise
  • 1 Orange Juiced
  • 1 T Orange Zest
  • 1 T White Wine Vinegar
  • Optional:
  • Walnuts or Pine Nuts

Preparation

Step 1

Preheat Oven to 400F.

Medium Bowl Mix Shrimp, EVOO, Salt & Pepper to Coat. Spread One Layer on Baking Sheet with Wire Rack & Roast 3 Minutes, Turn for 3 More. Switch Oven to Lo-Broil, Heat 3-4 Minutes until Pink & Firm. Remove & Allow to Cool.

Medium Bowl, Whisk Dressing (only enough mayo to be creamy), Add Salt & Pepper to Taste.

Place Greens in Large Salad Bowl, or Individual Servings, Add Onion, Dill, & Shrimp - Toss.

Add Dressing, Cheese & Nuts.

Serve Room Temperature or Chill.
