  • 1 medium onion, cut into 1-inch pieces
  • 2 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 2 medium parsnips, peeled and cut into 1-inch cubes
  • 1 turnip, peeled and cut into 1 inch cubes
  • 2 small zucchinis, quartered
  • 3 cloves garlic, peeled and chopped
  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp. balsamic vinegar
  • 1 Tbsp. chopped fresh rosemary
  • 1 Tbsp. chopped fresh thyme
  • 1/2 Tbsp. Kosher salt
  • 2 Tbsp. fresh parsley, chopped
  • 2 Tbsp. fresh Parmesan cheese

Directions:

Preheat oven to 450°F. In a large bowl, toss the carrots, onion, sweet potato, parsnips, turnip, zucchinis, and garlic with the olive oil, balsamic vinegar, rosemary, thyme, and salt. Spread the vegetables in a baking pan. Roast in the hot oven, shaking the pan once or twice, for about 50 minutes. The vegetables are done when they turn a toasty caramel color and are fork-tender. Garnish with the parsley and sprinkle with the Parmesan cheese. Serve hot or at room temperature.
