Ingredients
- 1 1/2 to 2 pounds rump roast
- 1 box whole grain spaghetti noodles
- 1/3 cup roasted red peppers ( chopped )
- 2 stalks celery ( cleaned )
- 1 1/2 teaspoons sea salt
- 1/2 teaspoons ground black pepper
- 1 teaspoons crushed red pepper
- 1 can mushrooms ( chopped )
- 1.4 cup onion ( chopped )
- 1 bay leaf
- 7 tablespoons unsalted butter
- 6 tablespoons all purpose flour
- 3 cups 2 % milk
- 1 package shredded Velveeta cheese ( 8 oz )
- 1 cup shredded cheddar cheese

Step 1
Start with the roast at room temperature Preheat the oven to 375°F (190°C).
Take a tablespoon or so of olive oil and spread all around the roast. Sprinkle 1/2 teaspoons sea salt around the roast . Place the roast in a roasting pan fatty side up and pour in water till about 3/4th of the roast is covered, add bay leaf and celery 3 hours or until tender.
While roast is cooking chop onion, roasted red peppers,mushrooms and cook noodles,
In a medium sauce pan melt 6 tablespoons unsalted butter, add the 6 tablespoons of flour and 1/2 teaspoon sea salt let cook over low heat for 3 to 4 minutes , then add milk and let cook stirring Occasionally until the mixture begins to thicken, at this time add the package of Velveeta cheese and stir till melted .Take off of heat and set aside.
In a 6 Qt dutch oven pan place the mushrooms ,onion and 1 tablespoons unsalted butter, cook over medium heat until onions are translucent, then add the remaining 1/2 teaspoon sea salt , 1/2 teaspoon ground black pepper, 1 teaspoon crushed red peppers, 1/3 cup roasted red peppers let cook stirring Occasionally for 10 to 15 minutes then add the cooled cheese sauce and stir until ingredients are combined.
Remove the roast from oven when internal temperature is 165 to 180 degrees then set aside to cool.
When roast is cool enough to touch, place on cutting board and slice into 1/2 inch pieces then add it to the mixture in the dutch oven and stir to combine.
When noodles are tender remove from stove and drain, place noodles on serving plates ladle roast beef mixture over noodles and top with Shredded Cheddar Cheese.
