Ingredients
- 3 duck breasts, skin on
- 1/2 cup cooking oil
- 1 tbsp ground cumin
- 1 tsp salt
- 1 tsp ground cayenne pepper
- 1 tsp fenugreek seeds
- 1 tsp ground black mustard seeds
- 1 tsp garam masala

Step 1
Prepping:
Cut each breast in half lengthwise.
In a large bowl, combine duck with oil, cumin, salt, cayenned, fenugreek seeds, mustard seeds, and garam masala.
Mix well, cover, and refrigerate for 8 to 10 hours, up to 24 hours.
Cooking:
Heat an ovenproof frying pan on high for 1 minute.
Carefully place 1 or 2 breasts, skin side down, in the pan.
Sear duck for 2 minutes.
Once all breasts are seared, place in frying pan and bake for 8 minutes.
Transfer to cutting board.
Allow to rest at room temp for at least 5 to 10 minutes or up to 30 minutes.
Cut each breast into 5 or 6 rounds to serve.
