- 1 1/2 lbs yams (about 2 medium) unpeeled
- 1/2 cup canola oil
- 5 tbsp finely chopped garlic (15 medium cloves)
- 4 tbsp chopped ginger
- 4 cups pureed tomatoes (8 medium)
- Spices:
- 1 1/2 tsp turmeric
- 1 tbsp ground black mustard seeds + 2 tsp fenugreek seeds OR
- 1 tbsp ground cumin + 1 tbsp coriander
- 1 tbsp crushed cayenne pepper
- 1 tbsp salt
- 8 cups water

Preparation
Step 1
Cut yams in half and place in medium pot, and submerge in water.
Bring to boil over high heat.
Reduce to medium and boil until yams are sot enough to easily pierce with knife, 20 to 25 minutes.
Drain and let yams cool.
Heat oil in large ot on medium high for 30 seconds.
Add garlic and saute for 2 minutes or until golden.
Add ginger and saute for another minute.
Carefully stir in tomatoes.
Reduce to medium and stir in spices.
Stir and saute for 5 minutes.
Peel yams, mash until smooth.
Add water and mashed yams to masala.
Stir well and bring to a boil.
Reduce heat to low and simmer for 5 minutes.
