Mary Lou's Cheesecake

Ingredients
- Crust:
- 1/2 cup graham cracker crumbs
- 1 Tablespoon sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Filling:
- 1 3/4 cups sugar
- 3 Tablespoons flour
- 3/4 teaspoon salt
- 1 Tablespoon lemon rind
- 5 8oz blocks softened cream cheese
- 6 eggs
- 1/2 cup heavy cream
- 1/4 teaspoon vanilla
- 1 cup sour cream-spread on cake at end of baking

Step 1
Crust:
Combine ingredients and dust bottom and sides of greased 9" springform pan with mixture.
Filling:
Mix sugar, flour, salt and lemon rind. Gradually blend into cream cheese and beat until smooth. Add eggs one at a time, beating after each addition. Add cream and vanilla and mix.
Pour into prepared pan. Bake at 325 degrees 60-70 minutes or until set. Remove from oven; increase heat to 450 degrees. Spread sour cream over cheesecake and return to over for 5 minutes.
Cool, remove from pan and serve plain or garnished with fruit or chocolate.
Tips to keep your cheesecake from cracking:
-cook in a water bath, encasing springform pan in foil to
prevent water from entering pan
-run a knife around the cake sides when just out of oven
to release cake sides from pan before it cools
-open oven door at end of cooking time and allow cake
to cool on oven rack
