Roasted Mushroom and Asparagus

Roasting any vegetable caramelizes it which brings out its full flavor. This is a great dish to serve with grilled or roasted meats.

Ingredients

  • 1 pound baby portabello mushrooms,cleaned, dried and thickly sliced
  • 1 pound asparagus
  • 2 garlic cloves, chopped
  • 1/2 cup olive oil
  • salt and pepper to taste
  • 1 teaspoon chopped fresh thyme

Preparation

Step 1

Preheat the oven to 375 degrees. Remove the woody stems off the asparagus and cut them into 2 inch pieces. Mix with the olive oil, garlic, herbs and seasonings in a 9x13 inch pan. Add the mushrooms and mix well. Bake for about 10 minutes. Add the asparagus pieces and continue baking 20-25 minutes.
