Ingredients

  • 1 stick unsalted butter
  • 1 large leek, including green part, cut into 1/4 in slices
  • 1/2 cup coarsely chopped green bell pepper
  • 1/2 cup cosrsely chopped yellow bell peppers
  • 1/2 cup sliced mushrooms
  • 1 large tomato, peeled and chopped
  • 3/4 cup good white wine
  • 1 1/2 tsp kosher salt
  • 1 tsp black pepper
  • 1 lb jumbo lump crabmeat
  • large handfull fresh basil leaves cut into ribbons
  • 1 cup shredded parmesan cheese
  • Garlic Cheese Grits

Preparation

Step 1

In large heavy saute pan melt butter over med heat, just as butter begins to sizzle, add leeks and cook 5 minutes or until tender.
Add all bell pepper and cook 2 minutes.
Add mushrooms and cook 2 minutes longer, or til mushrooms are softened & mixture is juicy.
Add tomatoes and cook 2 minutes
Add wine, salt, pepper and mix well, cover.
When liquid is bubbling, gently add crab, shake the pan instead of stirring so as to not break apart the large lumps of crab meat. cover and cook 1 minute or til heated thoroughly and mixture is back to bubbling.
Add basil, and top with parmesan cheese. Do not stir. Cover and reduce heat to low. Cook 1 minute. Adjust seasonings, serve immediately over Garlic Cheese Grits.
