- 6 ounces fiddleheads (or equal parts fiddleheads and asparagus)
- 1 tbsp. EVOO
- grated lemon rind to taste
- salt and pepper to taste

* Toss fiddleheads with lemon zest, salt, pepper and oil.
* Place on a parchment lined baking sheet and roast at 400 for 20-25 minutes, until crispy and done.
