Ingredients

  • Vinaigrette:
  • 2 cups fiddleheads
  • 2 cups asparagus, cut in 1" pieces
  • 1 1/2 tsp. toasted sesame seeds
  • 3 - 4 green onions
  • 2 tsp. rice vinegar
  • 2 tbsp. EVOO
  • 1/2 tsp. sesame oil
  • 1 tbsp. soy sauce
  • pinch red pepper flakes
  • 1 tsp. sugar or honey
  • 1 clove garlic, minced or grated

Preparation

Step 1

* Prepare a large bowl of ice water and set aside.

* Fill a saucepan with enough water to just cover fiddleheads and bring to a boil. Add fiddleheads and cook until just tender, about 5 minutes. Drain fiddleheads and plunge immediately into the ice water to stop cooking. Drain again and place on a dishtowel or paper towel to dry thoroughly.

* Repeat with asparagus.

* In a small bowl, combine dressing ingredients and whisk until well combined.

* Place cooked fiddleheads, asparagus and green onion slices in a bowl and toss with vinaigrette until dressing evenly coats the fiddleheads. Add toasted sesame seeds at serving time to keep them from getting soggy.
