Ingredients
- 6 cups coarsely chopped English hothouse cucumbers (about 2 lbs)
- 2 large tomatoes (about 1 lb) coarsely chopped
- 1 bunch scallions, chopped
- 1 cup assorted pitted olives, halved (I just used one small can)
- 1 (7 oz package) feta, crumbled
- 6 tbs olive oil
- 1/4 cup lemon juice
- Kosher slat and freshly ground black pepper

Step 1
Combine cucumbers, tomatoes, scallions, olives, feta in a large bowl. Whisk oil and lemon juice in a small bowl; season dressing with salt and pepper. pour dressing over salad; toss to coat. Season to taste with salt and pepper.
