Ingredients
- 1 tbsp. EVOO
- 1/2 tbsp. lemon juice, plus grated rind
- salt and pepper
- 1/4 tsp. herbes d'Provence
- 6 oz. skinless swordfish steak, cut into 1-inch cubes
- 5 - 6 slices pancetta, as needed

Step 1
* In a bowl, mix the oil and lemon juice and grated rind with the herbes de Provence and 1/2 teaspoon each of salt and pepper. Add the swordfish cubes and toss to coat. Set aside or in the fridge to marinate until serving time.
* Wrap each swordfish cube in 1/2 slice of pancetta and thread onto skewers (or soaked rosemary sprigs). Brush finished skewers with remaining marinade.
* Grill the spiedini over high heat, turning occasionally, until the swordfish is cooked through and lightly charred, 8 to 9 minutes. Transfer to plates and serve with an arugula and tomato salad.
