Chicken A La Suisse

Ingredients
- 1/3 cup Bisquick
- 1 1/2 teaspoons paprika
- 1/4 teaspoon pepper
- 6 skinned and boned chicken breasts
- 3 thin slices (1 oz each)fully cooked ham, cut in half crosswise
- 3 thin slices (1 oz each) Swiss cheese, each cut in half crosswise
- 1/2 cup dry white wine or chicken broth
- 1 Tablespoon cornstarch
- 1 cup half-and-half
- 1 Tablespoon chopped parsley (optional)

Step 1
Stir Bisquick, paprika and pepper until blended. Put chicken breasts between 2 sheets of waxed paper in a single layer. With meat mallet or the bottom of heavy saucepan, flatten each to 1/4" thickness. Top each piece with a half-slice of ham and cheese; trim edges to fit. Roll up chicken from narrow end; coat with seasoned baking mix. Arrange seam side down, in an 8" square glass baking dish. Cover loosely with waxed paper and microwave on high for 8 minutes, rotating dish 1/2 turn once. Add wine, cover loosely and microwave 4-6 minutes longer, until chicken is firm and barely opaque when tested with a knife. Remove chicken to a plate; cover to keep warm. Stir cornstarch into half-and-half until blended. Gradually stir into liquids from baking dish until smooth. Microwave on high 3-5 minutes, until thickened, stirring every minute. Stir in parsley. Spoon onto plates and arrange sliced chicken rolls on top.
