7 Up Pound Cake

Ingredients

• Cake:
• 2 sticks margarine
• 1/2 C shortening
• 3 C sugar
• 5 large eggs
• 3 C flour
• 1 1/2 T lemon flavoring
• 2/3 C 7 Up or Sprite
• Glaze: (optional)
• 1/2 C powdered sugar
• 2 t 7 Up
• 1 t lemon flavoring

Preparation

Step 1

1. Cream margarine and shortening. Add sugar a little at a time, mixing well. Add eggs, one at a time, beating well after each.

2. Add flour alternately with 7 Up, blend thoroughly. Add lemon flavoring. Pour into 10 inch tube pan. Place in cold oven. Bake at 325 deg. for 1 hour and 10 minutes. Cool in pan for 5 minutes. Turn on to plate to finish cooling.

3. For glaze, combine sugar, 7 Up and lemon flavoring. Pour over cake while hot.
