I found this recipe a few years ago in a Good Housekeeping article on Paula Deen. My mother was not her biggest fan but she loved this cake.

Ingredients

  • Cake:
  • 1 cup butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 3 cups sifted self-rising flour
  • 1 cup canned coconut MILK, well-stirred
  • 1 teaspoon vanilla
  • Filling:
  • 3/4 cup sugar
  • 1 cup sour cream
  • 4 tablespoons milk
  • 1/2 cup coconut
  • Frosting:
  • 1 1/2 cup sugar
  • 1/3 cup water
  • 1/4 teaspoon cream of tartar OR
  • 1 tablespoon light corn syrup
  • 1/8 teaspoon salt
  • 2 large egg whites
  • 1 1/2 teaspoons vanilla

Preparation

Step 1

Beat butter til creamy; add sugar and beat 6 min. until light & fluffy. Add eggs, beat. Add flour and milk alternately. Add vanilla. Divide batter into 3 greased 9" cake pans. Bake at 350 degrees 25-30, til done.
Cool cakes 10 minutes. poke holes in cake.

For filling, combine all ingredients. Pour filling over each layer. Stack layers and refrigerate. Secure with bamboo skewers to keep layers aligned.

For frosting, combine all ingredients except vanilla. Beat at high speed for one minute. Place over double boiler with 1" simmering water. Beat at high speed until soft peaks form and 160 degrees is reached. Beat in vanilla.

Frost cake. Sprinkle with coconut.

I like to be generous with the coconut!!
